I had the idea for this on a very cold morning last week in Dun Laoghaire when, on a whim, I sprinkled cinnamon on my morning coffee. I love Christmas and I love coffee and for various reasons the two are intrinsically linked in my mind: coffee with stollen on a paper plate at the German Market in Clonskeagh; silver pots of coffee and mince pies in the Shelbourne and even just the arrival of the various seasonal coffee cups, sentimentalist that I am. This is just ordinary black coffee, but it’s flavoured with clove, orange zest, cinnamon and cardamon. The flavours infuse well through a stovetop Italian coffee pot but it would also work with a French press. Add ingredients with restraint: two or three cloves, a teaspoon of orange zest, an inch of cinnamon – a hint of Christmas rather than an all-out wassailing.
