A quick party food idea for cold nights and hungry guests – “Winner Tacos“. Warm some mini tortillas, and put out a pile alongside little bowls of fried chorizo, spicy prawns, oven roasted sweetcorn, sliced green chilies, cold crunchy radishes, torn coriander leaves and whatever cocktail or beer you’re having, and just leave everyone to it. Mash an avocado with a little yoghurt and lime juice to dot over the top of the tacos, and serve with either crumbled feta or manchego. Then just make sure everyone has a drink in their hand and a napkin nearby and you’re good to go.
For the spicy prawns, fry your chorizo slices first then set them aside, leaving the remaining oil in the pan. Add a little more oil to the pan if necessary, and gently warm a little diced garlic (about one small clove) in a pool of the oil. Add a large handful of frozen prawns, a large pinch of cumin and coriander seed and a few generous dashes of Tabasco, and cook until the liquid has evaporated and the prawns are starting to sizzle in the pan. Serve while still warm.

Since Mexican cheeses like Queso Fresco and Cotija haven’t made their way across the Atlantic, try feta or manchego (or indeed parmesan) instead for a reasonably similar effect.
